Nina Quirk brings residents’ food voices to life at The Commons, turning every dish into a connection.
“You cannot truly understand people unless you understand their food voice. Every dish tells a story, every meal is a chance to connect and every resident has a voice that deserves to be heard,” says Nina Quirk, Culinary Services Director at The Commons in Lincoln.
“Our kitchen is a team working toward the same goal: making each dining experience enjoyable for our residents,” she explains. From milestone birthdays to seasonal celebrations, her focus is on building relationships with residents as much as preparing gourmet menus.

A Foundation Built on Food and Family
Nina grew up in a family restaurant and earned a master’s degree in gastronomy from Boston University. Inspired by her family, particularly her grandmother’s home-cooked meals, she values the role food plays in connection and care.
Learning the Food Voice of Residents
For Nina, discovering each resident’s ‘food voice’ is an ongoing journey of observation and conversation. She learns about preferences, habits and dietary needs, shaping menus that evolve weekly to reflect resident feedback, seasonal availability and culinary inspiration.
“My goal is to make our 220 resident taste profiles collectively happy. That is the recipe for success. Once I have that collection of information, I can do my job effectively and create meals that truly resonate with our residents,” Nina explains.
A resident favorite, Chicken Marbella, demonstrates this approach. First appearing in the 1982 Silver Palate Cookbook, the dish combines garlic, olive oil, wine, prunes and almonds. Nina prepares it from scratch with locally sourced ingredients and adapts it to accommodate dietary needs while preserving its classic flavors.
Residents can share their own family favorites and treasured recipes, which Nina brings to life in the kitchen, alongside a delicious variety of scratch-made dishes, low-sodium selections and sugar-free options to suit every taste.

Favorite Community Culinary Moments
One of Nina’s greatest joys at The Commons is the garden project she shares with residents. Together, they plan and select what to grow and tend raised beds filled with fresh herbs. Residents proudly bring ingredients they have grown themselves, which Nina transforms into seasonal dishes, turning shared effort and care into meals everyone can enjoy.

Nina’s year also included professional highlights that directly enriched her work at The Commons. At the Newport Mansions Wine and Food Festival, her sold-out session, Wild and Foraged: A Culinary Journey, explored ethical foraging, thoughtful sourcing and the relationship between ingredients, place and season.
Throughout the festival, she worked alongside celebrated chefs, bringing fresh ideas and perspectives back to the community. She later adapted the session for residents, sparking curiosity, conversation and inspiration around seasonal ingredients and culinary creativity.
Another highlight was the community’s spring Garden Party. With a botanical theme, edible flowers, infused teas and creative sandwiches, the event showcased local bakeries such as Wildrose Baking Company.
“Shapes, colors and flavors came together beautifully for the afternoon tea. It was spectacular and looked stunning. The residents and guests were incredibly complimentary, which made all the planning and creative effort so rewarding,” Nina reflects.
“Planning events is a fun, creative process, especially working closely with Megan Bailey, The Commons’ director of community relations. We are in harmony on the vision, which allows us to make it happen together. Bringing people together and supporting each other is one of the greatest assets in creating an extraordinary experience,” Nina adds.

Continuing the Conversation Through Food
Looking forward, Nina plans to explore more local ingredients, expand creativity with additional vegetarian and plant-based, high-protein options and leverage renovations to our Lemon Pippin on-site café to create a refreshed casual dining experience.
